Monster Rice Krispie Treats

Halloween is just around the corner.  Which means I should probably figure out costumes for my kids! Ha! It has been one of those months.  We still have lingering sickies and costumes has been the last thing on my mind! But I guess now I nee to buckle down! If you want to make Halloween even easier, make these treats! They look fancy but take no time at all! And no baking! And who doesn’t love monsters? Enjoy!

Monster Rice Krispie Treats

Ingredients Method Notes

Ingredients
  

  • 1 pan rice Krispie's cut into rectangles
  • 5-6 squares almond bark
  • Food coloring of your choice
  • Candy eyes
  • Sprinkles optional

Method
 

  1. Melt almond bark in microwave safe bowl in 30 second increments.
  2. Once it is melted and smooth, add food coloring of your choice and stir until fully incorporated.
  3. Dip cut rice krispies into the almond bark and place on a piece of parchment paper.
  4. Add candy eyes and sprinkles.
  5. Let it sit until the almond bark is solid.

Notes

You can also just use store bought rice krispies. You can cut them to any size you want. I did a few rectangle and a few square! Do what you want with shape!

Mini Magic Pie Bars

I love magic bars.  Something about the gooey, chocolatey, coconuty…mmm…maybe I should make these again.  These are like magic bars, but mini size and with pie crust.  It really doesn’t get better!!  The fun thing about these is you can use just about anything.  M&M’s, Reese’s pieces, or any kind of chocolate. Enjoy!

Mini Magic Bar Pies

Ingredients Method Notes

Ingredients
  

  • 1 refrigerated pie crust from a pack of 2
  • 1/4 c. butterscotch chips
  • 1/4 c. chocolate chips
  • 1/4 c. shredded sweetened coconut
  • 1/4 c. chopped nuts like walnuts or pecans
  • 1/3 c. sweetened condensed milk

Method
 

  1. Preheat oven to 350 degrees. Spray mini muffin tin with cooking spray.
  2. Unroll pie crust and cut 2" circles. Press into the muffin tin. Re-roll as needed. you should be able to get about 18-22 mini crusts from one pie crust.
  3. Sprinkle a few (4-5) butterscotch chips in each pie crust. Do the same with the chocolate chips. Then Sprinkle about 1/2 tablespoon each of coconut and nuts in each pie crust. Drizzle some sweetened condensed milk in each pie crust.
  4. Bake for 11-14 minutes until the crust no longer looks translucent and starts to get golden. Cool completely before removing from tins. They should pop right out with the help of a butter knife.
  5. Store in an airtight container for up to 4 days or freeze for up to a 1 month.

No Bake Monster Cookie Granola Bar Bites

I made these for an activity days  with my 8-9 year old group.  It is a good thing I left a few at home for my kiddos later, because they were devoured! They are a perfect snack and fun to eat!  Jacob LOVED them and has consistently asked for them since! Enjoy!

No Bake Monster Cookie Granola Bar Bites

Recipe by: Like Mother, Like Daughter

Ingredients:

1 1/4 c. old fashioned oats

1/2 c. creamy peanut butter

1/4 c. honey

1/3 c. mini M&M’s

1/3 c. mini chocolate chips

Instructions:

Dump all of the ingredients into a medium sized bowl.  Stir well for a few minutes until everything is combined and oats and chocolate pieces are coated with wet ingredients.  Roll mixture into small balls (about 1 -1 1/2 inches in size) carefully.  Wash hands occasionally to prevent mixture from sticking too much to them.  Place bites on a cookie sheet lined with parchment paper.  Store in fridge in an air tight container or ziplock bag.+
